SINGKAMAS PICKLES

2 cups grated green papaya
3 sections garlic
1 small piece of ginger
3 sweet green pepper
2 sweet red pepper
2 hot pepper

Soak the singkamas in strong salt solution              with a pick of alum overnight.
Soak the grated green papaya overnight in strong salt solution.
Wash the salt of the singkamas and papaya and drain.
Slice into small pieces the garlic, the sweet green pepper, the sweet red
        pepper, and the ginger and pack them in jars with the cure singkamas
        and grated papaya.
Pour over each jar full of solution of sugar and vinegar made of boiling 3
         parts vinegar to 1 part of sugar.
Seal sightly.
