1 pc bay leaf
20 grms carrots
40 grms onions
8 cups water
5 grams black peppercorn
1/2 cup vinegar
20 grms. celery
add salt to taste
Stuffing:
15 grms, chopped onions
10 grms chopped celery
40 grms. boiled potatoes, out in cubes
20 grms. frozen peas
20 grms strip of red peppere
100 grms. mayonnaise
1 hard boiled egg
1 banana leaf
5 grms parsley
salt and pepper to taste.
Boil lobster and cool.
Take out the meat carefully so as not damage the shell.
Cut the meat in cubes and mix with the stuffing ingredients.
Season to taste.
In an oval platter lined with the banana leaf, lay the lobster shell.
Stuff the lobster with the stuffing mixture and decorate with boiled
eggs and strips of red pepper.
Garnish with parsley.
