CHICKEN AND VEGETABLE SATAY

        1/2 lb. chicken breast, skin removed,
              cut in 3/4 inch cubes
        1 tbsp. salt-reduced soy sauce
        1 medium onion, quartered
        1/4 red pepper. cut into 3/4 inch cubes
        8 button mushrooms
        4 long bamboo satay sticks, soaked in water
           to prevent burning
        1/4 cup orange juice

      Combine chicken with soy sauce and
              let marinate 15 minutes.
      Thread chicken, onion, red pepper and mushrooms 
               onto satay sticks.
      Place on a sheet of foil and brush with orange juice.
      Broil under medium heat until chicken is white.
      Baste with orange juice frequently to prevent drying out.
      Serve with brown rice.
