PAKSIW NA HITO WITH CASSAVA LEAVES

            8 medium size hito (catfish)
            1/2 spon crushed ginger
            2 cups coconut milk
            1 cup ground cassava leaves or 
               cut into strips
      Discard cassava leaves juice by squeezing
            it out the leaves.
      Set aside.
      Cook hito into 1 cup of water, for about
           10 minutes.   

  Add cassava leaves, ginger, and salt.
      Cook for 15 minutes.
       Add 1 cup coconut milk, and boil for 8 minutes.
       Add the remaining 1 cup coconut milk.
       Cook for 4 minutes.
       Serve.
