ALMOND FLOAT

           2 1/2 cups milk
           1/4 cup sugar
                 almond extract
           2 tbsp. gelatine
           1/2 cup water
               selection of prepared fresh fruit
               and canned lychees
      Scald milk, remove from heat and ad sugar.
      Cool slightly then add almond extract; cool.  

Sprinkle gelatine over water and leave until water is absorbed.
      Dissolve gelatine over hot water and cool.
      Stir into milk mixture.
      When ready to serve, cut almond gelatine into diamond shapes.
      Place fruit in a serving bowl and arrange diamond shapes on top.
