ROAST DUCK AND PLUM SAUCE

           4 1/2-51/2 duck
           1 tbsp. vegetable oil
           1/4 cup plum sauce
              MARINADE
           1/4 cup chicken stock
           1 tbsp brown sugar
           3 tbsp. soy sauce
           2 tbsp. honey
           1 tsp. five- spice powder

      Combine marinade ingredients in a large bowl.  

Add duck and baste with mixture.
      Marinate 1 hour.
      Baste and turn duck every 15 minutes.
      Drain duck, reserving marinade.
      Roast duck.
      Chinese style on a rack over a pan of water for
           2 hours, basting with marinade every 30 minutes.
     Chop duck into serving pieces and arrange on a
          serving platter.
     Heat oil in a saucepan, add plum sauce and heat through
     Pour over duck..
