PIALAM

              6 sliced hito (catfish)
              2 cups coconut milk,
                 2nd extraction
             1 piece yellow ginger, sliced
             2 tablespoons sliced onion
             1 piece "sai" leaf
             2 1/2 teaspoon salt
             1/2 cup pure coconut milk
      Arrange fish in a casserole.
      Add all ingredients except pure coconut milk.
      Cook over moderate heat until fish is almost done.

Add pure coconut milk and cook another 10
            minutes.
      Serve hot 6 servings.
      Lemon grass or tanglad leaves, may be used
           instead of "sai" leaf.
