UTAN

            2 eggplants, sliced
            2 ampalaya, sliced
            1 small bunch sitaw, cut into segment
            1 segment squash
            1 cup malunggay or horseradish leaves
            1 cup alugbati
            1 large tomato, sliced
            1 large onion, sliced
            1 small piece ginger, crushed
        Boil water, add the ginger and keep boiling for 2 minutes.  

  Add all the vegetables in the proper order, starting with those
                which need longer cooking time.
        Don't overcook.
        Serve steaming hot.
