PACIENCIA COOKIES

              4 eggs whites
              2/3 cup all-purpose flour
              1 tsp. baking powder
              1 tsp. cream of tartar
              1/2 tsp. salt
                    lemon extract or
                    calamansi rind
      Stir together flour, baking powder 
          and salt.
      Beat egg whites and cream of tartar 
          until stiff but not dry.
      Add sugar gradually; beat until thick.     

Add flavoring.
      Fold in flour gently but thoroughly.
      Drop from tip of tsp. on greased cookies
           sheet or press through a paper cone.
      Bake at 400F.  for 10-12 minutes or until done.
      Make 6 dozen cookies.
