SMOKED TAMBAN (TINAPA)

             1 kilo tamban or fish
             1/2 cup salt dissolve in
             4 cups water
             1/4 teaspoon saltpeter
                  crushed laurel leaves
             2 tablespoons salt
             1/2 cup water
             1 teaspoon sugar
      Slit fish at dorsal end to remove all entrails.
      Wash thoroughly and soak in salted water
           for 30 minutes. Drain.
      Mix the rest of the in ingredients in a saucepan;

 add fish and let boil 1-2 minutes.
      Arrange fish on wire trays to drain for 10 minutes.
      Place in a cool dark place to dry for 3 hours.
      Smoke fish on wire trays enclosed in a drum using
           sawdust as fuel for 1-2 hours or until fish is
           golden brown.
