STEAMED BEEF BALLS WITH WATER CHESTNUTS

           1 cup uncooked rice
           1 lb. round steak, minced
           3 green onions, finely chopped
           1 tsp. finely chopped fresh ginger
           2 water chestnuts finely chopped
           1 egg, lightly beaten
           1 tbsp. soy sauce
           3 tbsp. sherry
               green vegetable leaves
               soy sauce and chili pepper sauce to serve
     Place rice in a bowl, cover with water and soak for 1-11/2 hours.
Drain well and spread out on a tray to dry.
     Combine steak, green onions, ginger, water chestnuts, egg, soy

and sherry; mix until well blended. Form mixture into balls about
11/2 inches in diameter.
     Roll each ball in rice until completely covered. Place balls on green
vegetables in a steamer basket, leaving enough space between so they
don't touch each other.
     Place in a steamer and steam for 30 minutes over gently boiling
water. Serve with soy and chili pepper sauce for dipping.
