UKOY NA PAPAYA

             2 cup grated papaya
             1 tsp. salt
             1/2 tsp. black ground pepper
             1/2 kilo fresh shrimps
             3/4 cup all purpose flour
                    oil for frying
      Trim and wash shrimps in cold water.
      Do not peel
      Mix flour, salt grated papaya and ground
           pepper well.  

Place 3 tbsp. of the grated papaya mixture
           onto a sauce to form patties.
      Press 3-4 fresh shrimps on each tbsp. of the
            patty and fry in deep hot fat until golden
            brown.
      Drain well.
      Serve with vinegar sauce (vinegar, minced
           garlic, sugar, salt pepper).
